Grilled veg is so delicious and can be eaten straight away or is equally yummy served cold in a salad the next day. When having a BBQ our new favourite thing is to have a large platter of grilled veg rather than salad… The kids love it, especially the corn on the cob!
4 Corn On The Cob (Cut in Half)
1 Courgette, sliced
1 Red Pepper, cut into 2cm strips
1 Yellow Pepper, cut into 2cm strips
1 Bunch of Asparagus, take off the ends
1 Red Onion, cut into wedges
250g Mushrooms, cut in half
2 tbsp Honey
4 tbsp Oilive Oil or Rapeseed Oil
2 Cloves of Garlic
2 tbsp Balsamic Vinegar
Pinch of salt
Add the ingredients for the marinade into a bowl and mix. Cut the veg and add to the marinade, cover and pop in the fridge for an hour.
Heat the BBQ or griddle to a medium temperature and cook the veg for 10 minutes. (one side for 5 mins before turning)
The trick for great grilled veg is to not fuss with them too much, once they are on the grill, leave them to cook without constantly turning.
